Detailed Itinerary
Pick-up from hotel in Fukuoka City (or Hakata Station)
Scenic drive to Dazaifu (40 minutes southeast through suburban Fukuoka)
Dazaifu Tenmangu Shrine exploration, one of Japan's most significant Shinto shrines dedicated to Sugawara no Michizane (deified as Tenjin, god of learning and scholarship), walk approach street lined with shops selling local crafts and sweets, cross iconic Taiko-bashi Bridge (drum bridge) - its three arches symbolize past, present, and future, enter shrine grounds planted with 6,000 plum trees (Michizane loved plum blossoms - spectacular in February!), main hall rebuilt in 1591 with ornate cypress bark roof, witness students praying and buying good luck charms for exams (shrine receives millions of exam prayers annually), explore Kyushu National Museum behind shrine if interested in Asian cultural history, MUST TRY: Umegae-mochi on approach street - grilled mochi cake filled with sweet red bean paste and stamped with plum blossom design (¥130, best eaten hot off the grill), visit striking modern Starbucks designed by Kengo Kuma with interwoven wood lattice facade
Return drive to Fukuoka city (40 minutes)

Drive to Ohori Park area (10 minutes)
Ohori Park & Fukuoka Castle Ruins, walk around Ohori Park - beautiful lake park created from Fukuoka Castle's outer moat, scenic 2km walking path around large pond with bridges, Japanese garden, and tea houses, visit Fukuoka Castle (Maizuru Castle) ruins in adjacent Maizuru Park, see remaining stone walls, reconstructed turrets, and historical excavations, climb to observation deck for city views, particularly beautiful during cherry blossom season (late March-early April) when park fills with hanami (flower-viewing) parties, peaceful urban oasis despite being in city center
Drive to Canal City Hakata (10 minutes)
Canal City Hakata & Nakasu area exploration, Canal City - massive 1996 shopping and entertainment complex designed as 'city within a city', waterways run through the middle with occasional fountain shows and events, 5 buildings connected by walkways housing 250+ shops, restaurants, cinema, theater, 13-story hotel, Ramen Stadium on 5th floor - houses 8 shops representing different regional ramen styles from across Japan (good for sampling variety if you want second ramen!), browse fashion boutiques, electronics, Japanese character goods, unique architecture makes it photogenic - very different from typical malls, walk to nearby Nakasu district - Fukuoka's entertainment quarter on island between rivers, see neon lights and bustling nightlife preparing for evening (visit later in tour)
Kushida Shrine visit, Hakata's oldest and most important shrine (founded 757 AD), guardian shrine of Hakata merchants and home of famous Hakata Gion Yamakasa festival (July), see kazariyama - giant ornate festival float permanently displayed inside shrine (actual festival floats can weigh tons and be carried by teams of men!), beautiful traditional shrine architecture, locals stop by for quick prayers - experience everyday Fukuoka spiritual life, browse approach street for local crafts and snacks

Yatai (food stall) experience begins, as dusk falls, Fukuoka's famous yatai start setting up along rivers and in downtown Tenjin/Nakasu areas, these tiny mobile food stalls (each seats 8-12 people maximum) are Fukuoka's claim to fame - over 100 still operate city-wide, driver takes you to best yatai area (typically along Nakasu river or Tenjin Nishi-dori), choose a yatai (driver can recommend good ones - some famous, some local favorites), sit at counter on small stools literally shoulder-to-shoulder with other diners and chef, order small dishes: yakitori (grilled chicken skewers), oden (simmered vegetables and fish cakes), gyoza, mentaiko (spicy cod roe - Fukuoka specialty), ramen (yes, more ramen!), enjoy beer, sake, or highball while chatting with chef and neighboring diners, this is quintessential Fukuoka experience - locals and travelers eating together in convivial atmosphere, yatai culture unique to Fukuoka and disappearing even here (protected by city), can hop between 2-3 yatai trying different specialties if you wish
